If you’ve been struggling to establish solid nutrition habits, stick with your goals, and cultivate a healthy relationship with food, don’t miss out! During this five-part lecture series, our coaches will take a deep dive into all of these topics (and more!) and provide practical tools that you can incorporate into your own life. 

What Is Healthy Eating, Anyway? with Sohee Lee

In the pursuit of a healthier diet, people often find that they inadvertently pick up some unhealthy eating behaviors and attitudes along the way. What does “healthy eating” truly mean? What does it mean to have a healthy, robust relationship with food? What are some red and green flags to look out for? How can we prioritize a nutritious dietand look after our overall well-being? This lecture will answer these questions and help lay the groundwork for healthy eating. 

Creating Impactful Behavior Goals with Rachel Pendakur 

Having goals can be beneficial for our well-being, autonomy, and confidence, but simply setting resolutions and intentions isn’t enough. In order to reach our goals, we need to bridge the gap between intention and behavior. In this lecture, we'll discuss how to create impactful behavior goals using evidence-based tips and real-world examples. 

Life After Long-Term Dieting with Natalie Fay

Have you ever felt like you’re destined to diet forever? Are you confused about how to break away from dieting? This presentation will review the characteristics of a long-term dieter, implications of long-term dieting, and strategies to resume regular eating behaviors. Key concepts to be discussed include working toward a healthy relationship with food and recognizing personal preferences to help guide eating habits.

Mindful Eating In Action with Elizabeth Valencia 

Do you feel like you can’t trust yourself around food? Have you ever sat down to eat without even noticing when you finished your plate? In this workshop, you’ll learn to build self-awareness so you can make food choices and rely on internal cues with confidence. We’ll discuss the effects of external cues on eating behavior and how to use them to your advantage. You’ll also learn principles and strategies that will help you work towards becoming a more mindful eater.

Meal Planning Basics with Tara Hux

The final portion of this workshop will cover the three pillars of creating balanced meals: planning, shopping, and prepping. Coach Tara will review several topics including preparing a grocery list, planning balanced meals for a busy schedule, incorporating pantry staples, and more. Attendees will gain a comprehensive understanding of how to create an efficient, flexible meal plan that incorporates foods they actually enjoy.

The workshop wrapped up with a 30-minute Q&A session featuring all five of our speakers.

Sohee Lee (MS, CSCS*D, CPPC) is the founder of SoheeFit Systems, LLC. She has been coaching virtually since 2012, and offers multiple online fitness services and e-books. Sohee holds a B.A. in Human Biology from Stanford University, an M.S. in Psychology from Arizona State University, and is a Certified Strength and Conditioning Specialist through the National Strength and Conditioning Association with Distinction (NSCA-CSCS,*D). She is in the process of earning her PhD in sports science through the distance program at Auckland University of Technology (AUT) and serves as the Fitness Advisor for Women's Health magazine. She is well-known for evidence-based methods that help clients achieve sustainable results without sacrificing the things they love, and is passionate about educating the general public on fitness-related research. Rachel Pendakur (MA, CSCS, CPPC) is a veteran online coach and Head of Education with ELT Method. She holds a B.A. in Psychology, a B.A. in Music, and an M.A. in Psychological Science. Rachel jumped at the chance to work with Sohee as an in-person training client in the Spring of 2018, and has consistently enjoyed the style of training that is so integral to the ELT Method. She has greatly benefitted from Sohee’s mentorship and seen a huge amount of training progress, which she attributes to an approach focused on moderation and sustainability. She is a Certified Strength and Conditioning Specialist through the National Strength and Conditioning Association (NSCA-CSCS), and passionate about health psychology and habit formation. In her free time, Rachel runs a private piano studio where she uses her classical performance background to train children and adults of all ages. Natalie Fay (MS, NASM-CPT, CPPC), Head Coach at ELT Method, found her passion and love for strength training in 2015. After struggling with body image and confidence issues for decades, strength training changed her life and she wanted to help change the lives of others. In 2019, she became a NASM certified personal trainer and went on to pursue a Master’s degree in Exercise Science with a concentration in Health & Wellness at the University of South Florida. While at USF, Natalie was involved in research focusing on fat loss, body composition, and the psychological aspects of exercise. In her free time, Natalie enjoys traveling and spending time with her two (soon to be three!) children, husband, and crazy pups. Get to know her better on IG! → @natalie_fay__

Elizabeth Valencia, RD, spent part of her childhood living in Mexico and currently resides in Los Angeles, California. She has a B.S. in Nutritional Science with a concentration in Dietetics. During college, she worked as a Community Nutrition Educator where she learned the importance of making nutrition accessible for everyone. She also worked as a diet tech at an adolescent eating disorder facility, so much of her philosophy revolves around making nutrition sustainable and enjoyable. After struggling with body image and a negative relationship with food herself, Elizabeth saw the importance of addressing these issues with clients. In 2019, she became a Registered Dietitian and has been helping others reach their true potential through sustainable habits and zero restriction or fad diets. She enjoys weightlifting, running, silly dance parties with her daughter, and trying new restaurants and recipes. Elizabeth is available for nutrition-only coaching. Tara Hux (RN, BSN, CPPC), online training and nutrition coach, is an Ohio native with a competitive soccer background. It was through soccer that Tara was introduced to strength training, and she quickly fell in love with health and fitness. She has suffered multiple knee injuries over the years which sparked her interest in creating safe and effective strength training programs. In addition to strength training, Tara also has a passion for nutrition education. After struggling with eating disorders, negative body image, and confidence issues for years, she now has a healthy relationship with food and exercise. She has made it her mission to help others achieve this, too. Tara has also worked as a nurse for six years in the neonatal intensive care unit.
